Okinawa So-ki Soba noodle


So-ki means Pork. Well stew pork.
This pork was stew until the bone become soft.
I could not make this So-ki pork, but
I made what its like...

Okinawa So-ki Soba noodle is really good.

Crispy noodle with thicken vegi sauce


This is called 'Ankake Yakisoba'
This is really popular in the place called Nagasaki.
Sometime, they do use regular noodle. I like crispy and regular.
Its really good. ^^

Combine shrimp with chili sauce


干烧明虾
Shrimp with chili sauce. One day when i wnet to store, I found really big and nice fresh shrimp.

This shrimp with chili sauce just poped into my head and, here you are...

I know... this dish originaly from China, but I do not know how to cook in chese way. I have Chinese cook book by Japanese chefs. And I also have not taste yet the real shrimp with chili sauce... humm. I will try one when i have chance to visit China next time.

tom yam kung


It does not look like Tom Yam Kung.. but the taste was ok...
I remember the day in Oxford, England. When I was in Oxford in 1998(?), I met a guy from Thailand. I do not remember how we've met. But we became good friend, and one time, he took me to the Thai restaurant.. He told me they had the best Thai food in Oxford. And it was ture. I never tased Thai food at that time. He have ordered me all kinds of good deliciouse Thai dish, and it was the first time to taste Tom yam kung. It was really interesting taste, i thought.. i could taste all the spices, and distinctive smell was wonderful experience.

I always remind him when I eat Thai food... I do not remember his name or his e-mail address anymore... I should have be more nicer..... at least to remember his name... humm.

Salmon and white cream sause with rice... and cheeeeese♪

I am really busy these days. But you got to eat, right? I go home around 9pm or sometime 10pm, and think about what to eat tonight is bit hard.... These days, I only cook from my easy recipe book. I like mushroom, (autumn is a mushroom seaso in Japan)and I haven't eaten fish for more than 2 weeks, so.. i thought... mushroom and fish.... hummm... I went to supermarket, and search around what to eat. And I found really nice salmon, so... I cook this dish tonight.

Its really easy to cook.

First, you cook fried rice with broccoli and lot of mashrooms. I used shimeji mushroom. Put salmon into the oven for about 5 minutes. Put salmon on top of the fried rice. Make white sauce. Put white sauce on to of the salmon, and put cheese on top... then put it into the oven until the cheese gets nice and gold.

Tataaaa

Done!

You only need 25 minutes to cook this dish. Its hot, creamy and really tasty!
(yes, i need tabasco when I eat cheesy dish) haha

Omurice - One of popular Japanese dish

This dish called Omurice. Originally born in Osaka, Japan.

Chicken rice is wrap around with egg. and this time, I used demiglace sauce on top of Omurice. You can use just tomato sauce, white sauce, or maybe hot chilly sauce is sound good to me.



Ingredients: (Make 4 servings)
1/2 lb. chicken breast
1 onion
1 green peppers (if you like)
4 white mushrooms (if you like)
4 tbsps ketchup
salt and pepper to season
1 tbsp vegetable oil
4 eggs
4 cups steamed rice

How to Cook:
1. Dice chicken, green pepper, mushrooms, and onion.
2. Heat vegetable oil in a frying pan and saute diced chicken. Add diced onion, mushrooms,and green pepper in the frying pan and saute together.
3. Add steamed rice in the pan and mix well. Sprinkle some salt and pepper.
4. Stop the heat and add ketchup and mix well.
5. Heat another frying pan and put some vegetable oil.
6. Whisk an egg in a bowl and pour the egg in the frying pan. Quickly spread the egg in the frying pan andmake a thin, large, and round omelet.
7. Place chicken rice in the middle of the omelet and fold top and bottom sides of omelet over the chicken rice.
8. Cover the frying pan with a plate and turn them over to place the omerice in the plate.
9. Repeat step 7-11 to make four plates of omurice.
10. Put some ketchup on top of omurice. (try your favorate sauce)

South Indian dish

Have you ever tried real South Indian dish?



Here they are. I wnet to ... not the cooking class, but we had meeting. And this man (I do not even know his name,, and he would not tell us his name...) love to travel south India. while he travels, he learn how to cook original dish in South India... And he show us how to cook... and gather up and eat... He wasn't a good teacher, because he never really explain what is what and which is which. And he used many many spices... The spices that we never use in Japanese food. and it was heard to remember all. but it was fun. and it was GOOOOOD. I am thinking to cook next weekend. ^^

Teriyaki chicken and Sushi roll

Next weekend, I am going to have a little event called 'learn how to teach Japanese food to a forign peole.' as part of my job assignment. This event for our international exchange volunteer group memeber who interested in helping forign regidents. They are also want to use their skill (English) too. So, organized this event , so far I have 20 Japanese participants and 11 forign participants.

I made my original recipe, and today, I tired to cook if the taset was ok.. It was really good. Espeically, Teriyaki chiken burgar. Soooo good. you should try one!.. I will up date the recipe with nice and neet picture next week, so you can add my recipe to your own recpie book. Looking forward to it!!

Easy easy spaghetti!

All you need is slice of bacon and some tomatos.





Granpa-in-law grows potato, and he gave me ALOT!!! so I made potato salad... This recipe is from Martha Stward.. I was watching Martha's TV show, and she show this potato salad, and its really goooood. It is called 'All-American potato salad'



Serves 10 to 12
4 pounds russet potatoes (about 8 potatoes)
1 tablespoon plus 2 teaspoons salt
3 tablespoons cider vinegar
3 large eggs
1/2 cup plus 2 tablespoons Homemade Mayonnaise, or prepared
1/2 teaspoon celery seed
1 teaspoon dry mustard
1/2 teaspoon freshly ground black pepper
3 stalks celery, cut into 1/4-inch dice (3/4 cup)
1 red bell pepper, cut into 1/4-inch dice (1/2 cup)
1 medium onion, finely diced (1/2 cup)
10 cornichons, cut into 1/4-inch dice (1/4 cup)
3 scallions, thinly sliced (1/2 cup)
2 tablespoons freshly chopped flat-leaf parsley
1 teaspoon paprika
